PASTRY CERTIFICATE:
This certificate program is designed for students seeking to attain skills associated with hotel and restaurant pastry work. The program will focus on desserts, sweet sauces, French pastry, mousses, sorbets, ice creams, egg foam cakes, Gateau's, Tortes, and chocolate work. Coursework combines theory and lab skill practice. ASSOCIATE IN APPLIED SCIENCE DEGREE OR CERTIFICATE: Students may apply for an Associate in Applied Science degree or a certificate upon completion and verification of all requirements and standards. The application procedure is listed on page 62 of the 2004 - 2005 catalog.
